Parmesan Ranch Chicken

This is the easiest recipe in the entire world. Here’s what you’ll need:

1 pound of boneless, skinless, chicken breast
1 tablespoon Olive Oil
1 packet of Ranch Seasoning
1 pinch of thyme (fresh or dried is fine!)
Salt and Pepper to taste
Parmesan cheese to taste

Boom.

  • In a small bowl mix together the olive oil, ranch, thyme, salt & pepper.
  • Take out the chicken and with a small brush gently paste the mix on the chicken until covered.
  • In a medium to large sauce pan, place another tablespoon of olive oil or non-stick spray.
  • Once hot, place the chicken on the pan and cook through. (usually 7 minutes per side)
  • 2 minutes before taking the chicken off, place the parmesan on top and wait for it to melt.

Double boom.

Serve with your favorite sides. I like it with Kale and Potatoes.

This can serve about 3-4 people OR it makes a great lunch of dinner meal prep for the week.

Spicy Chicken Tinga Tacos

This recipe is soooo easy. I use an instant pot but it’s definitely not necessary! I don’t use a ton of Chicken, I try to eat as little meat as possible in my diet. However, the veggies and various other ingredients I add to this recipe is what makes it soooo danggg goood. Okay, here’s what you need:

Ingredients

  • 1 pound shredded chicken
  • 1 chopped red or sweet onion
  • 2 cloves garlic, minced
  • 2 tablespoons chipotle peppers in adobo sauce
  • 1 can crushed fire-roasted tomatoes
  • 1⁄4 cup chicken stock or broth
  • Corn Tortilla’s
  • 1 Red Bell Pepper
  • Cheese of your choice
  • 1 Jalapeño apeno chopped (optional)
  • 1 tablespoon of Oregon
  • 1 tablespoon Olive Oil
  • Cilantro (optional)
  • Lettuce (optional topping)

In a skillet, turn it on low to medium heat. Once it’s warm, take 1 tablespoon of olive oil and coat the pan. Put in the chicken, garlic, peppers and onions. Saute together until soft. Pour in the fire roasted tomatoes, broth and chipotle peppers. Mix in until completely covered. Toast the tortilla’s, prepare your taco and BOOM.

Sensational Spring Salad Recipe

I know, I know. We’re still in April. Not quite Summer yet. However, it is warming up a bit and while we have some time indoors, we should take advantage of new recipes! I’m really picky when it comes to salad…if you are as well, feel free to mix this up! Whatever add on’s feel like summer to you…do it. Ok, enough small talk, enjoy!

This recipe makes 3 servings.

Ingredients
2 cups Romaine Lettuce
1/4 cup Shaved Almonds
1/4 cup Cranberries
1/3 cup Shredded Parmesan
1 Orange Bell Pepper
2 small Sweet Potatoes
1/2 cup Shredded Brussel Sprouts

Dressing
I use any kind of vinaigrette
(my favorite is Champagne Vinaigrette from Trader Joes)
If you want to make your own:

2 Tablespoons Olive Oil
1 Tablespoon Balsamic Vinaigrette
1 Teaspoon Dijon Mustard
Salt & Pepper to taste
