Sensational Spring Salad Recipe

I know, I know. We’re still in April. Not quite Summer yet. However, it is warming up a bit and while we have some time indoors, we should take advantage of new recipes! I’m really picky when it comes to salad…if you are as well, feel free to mix this up! Whatever add on’s feel like summer to you…do it. Ok, enough small talk, enjoy!

This recipe makes 3 servings.

2 cups Romaine Lettuce
1/4 cup Shaved Almonds
1/4 cup Cranberries
1/3 cup Shredded Parmesan
1 Orange Bell Pepper
2 small Sweet Potatoes
1/2 cup Shredded Brussel Sprouts

I use any kind of vinaigrette
(my favorite is Champagne Vinaigrette from Trader Joes)
If you want to make your own:

2 Tablespoons Olive Oil
1 Tablespoon Balsamic Vinaigrette
1 Teaspoon Dijon Mustard
Salt & Pepper to taste
